KAAK, A STORY OF BREAD IN THE SHAPE OF A HANDBAG

They're everywhere in Beirut but not yet in Belgium.

Kaak is Lebanese street bread, traditionally sold from street food stalls. A simple and popular product, crispy on the outside, soft on the inside... And deliciously addictive.

But it's also the shape that makes it unique! The kaak resembles a small handbag: the hole allows you to hang it from a wooden bar to let the dough rest. This avoids storing the bread horizontally, which would cause it to deflate.

The basic ingredients? Flour, water, yeast and mahlab, an aromatic spice extracted from the cherry pit. At Foor'n, the kaak is baked in front of you in a stone oven at a very high temperature. The bread puffs up in just a few minutes and turns a lovely golden colour. It is then filled with zaatar, labneh, halloumi and black olives, as well as carob syrup with tahini and pistachio cream with rose water. Flavours that take us far away...
